Chopped Chinese Chicken Salad

Who thinks that the salad dressing is the best part about a salad? I do! Most of the time anyway…the dressing on this Chopped Chinese chicken salad is phenomenal but it’s the crunchy, flavorful veggies and chunks of chicken that really do it for me.

We sent my parents off on a mission this April and I was a little surprised by how my heart felt. I’ve known my whole life that my parents would retire and choose a life of serving, so I was bursting with happiness for them, but that wasn’t all. I had a little bit of sadness, grief in a way. Sad that things were changing. Sad that they wouldn’t be as easy to see. But most of all I was so, so peaceful. I’m telling you, it has felt so right.

We went to Idaho to send them off on their way and in an effort to ease some of the stress off of mom I made this Chinese chicken salad. Actually, we used turkey not chicken, it’s a long story. It was simple but it hit everything I need in a dinner, dash of sweet and salty, crunchy and juicy, my goodness it was the perfect salad.

What Ingredients Go in Chinese Chicken Salad?
I absolutely love these the combination of all these ingredients! They are crunch and juicy and the perfect orchestra of flavors and textures.

For the Salad
Chopped Chicken
White Cabbage
Red Cabbage
Romaine Lettuce
Iceberg Lettuce
Red Bell Pepper
Sugar Snap Peas
English Cucumber
Green Onion
Sesame Seeds
Salted Cashews
Mandarin Oranges (optional)
Wonton Strips
For the Dressing
Sesame Oil
Rice Vinegar
Soy Sauce
Ginger (fresh)
Sesame Seeds

How to Make Chinese Chicken Salad
There’s not much to making a salad, right? Yep, that’s exactly right!
Whisk together the dressing ingredients and set aside.
Layer all the ingredients in a large bowl.
Add the dressing and toss to coat.
Top with wonton strips.

Tips for Chinese Chicken Salad
Chicken: I like to grab a rotisserie chicken at Costco. You’ll get about 3 cups if you use the breasts and thighs.
Cabbage: I slice the cabbage just with a knife, but you could use a mandoline if you want to. You can also buy a bag of coleslaw and really simplify things!
Dressing: If you want to spice things up, add a half teaspoon of sriracha or if you want it more sweet, double the amount of sugar.
Cashews: Feel free to use whatever nuts you want. Slivered almonds are awesome in this!
Can You Make Chinese Chicken Salad Ahead of Time?
You can make the salad dressing up to 8 hours before you plan to serve it. You can also chop up all the ingredients and store them in ziploc bags until you’re ready to eat. Combine everything and stir to combine.

It’s sweet and salty, crunchy and juicy, with a delicious sesame dressing, and it can be eaten as a main dish, side dish, lunch or snack. I love love love this wonton Chinese chicken salad!

*You can replace the fresh ginger with 2 teaspoons of dried but I highly recommend using fresh. It’s so much better!
