Enchilada Style Ground Beef Burritos

Enchilada style ground beef burritos are indulgently stuffed with flavorful ground beef and topped with red enchilada sauce and loads of gooey melted cheese!

One of our favorite restaurants here in Utah is a little taqueria called Lonestar. When you get a burrito, it comes out wrapped in foil and looks like a small infant could be wrapped in it. It is really that huge! I always try to get Cade to split one with me, but nope, he wants his own. They are too good to share!

These ground beef burritos are equally ginormous and delicious! The ground beef is amped up with Dr. Pepper and Better Than Beef bouillon and then the whole thing is drowned in a combination of red enchilada sauce, beef stock and cheese, glorious cheese!
It is time to create your own burrito infant! And you definitely aren’t going to want to share!
What are Enchilada Style Burritos?
Enchilada style burritos are burritos that are covered in a red or green chile sauce and lots of cheese and then baked in the oven until the cheese is melted. They are also known as smothered burritos.

 What Ingredients Do You Need for Enchilada Style Ground Beef Burritos?
This recipe takes a few ingredients to make the ground beef extra flavorful and to take the sauce on top to the next level. Head down to the recipe card for the measurements.

How to Make Enchilada Style Ground Beef Burritos
These burritos come together super fast and really boil down to cooking the ground beef, making the sauce, constructing the burritos and then baking them. Ain’t no thang!
Ground Beef Filling
Brown the ground beef in a skillet and drain the fat.
Add the taco seasoning and the Better Than Bouillon.
Stir in the Dr Pepper and water, simmer until the liquid is mostly gone.

Melt the butter in a saucepan.
Whisk in the beef stock, then the enchilada sauce and chili powder.
Simmer until it thickens.
Put 1/4 of the beef into the center of a tortilla with a little cheese.
Wrap the burrito and put it in a baking dish or oven safe plate.
Pour sauce over the whole burrito and top with a heaping pile of cheese.
Bake and then add your favorite toppings.

How to Fold a Burrito
Okay, there are a few different opinions out there on how to fold a burrito, so this is how I do it.
Place the filling in the center of the tortilla leaving plenty of room around the edges to fold the tortilla.
Grab one side of the tortilla and fold it over the filling past the center of the tortilla and kind of tuck the filling back as you fold down the tortilla.
Then take both sides and fold them over toward the middle of the tortilla.
Then grab the whole filled portion of the burrito and roll it over onto the unfolded portion of the tortilla until it is completely rolled up.
What Toppings to Put on Burrito?
You can add whatever toppings you like best on your Mexican food. We like to put a dollop of sour cream on top with a scoop of pico de gallo. Here are a few other options:
What is the Difference Between a Burrito, Enchilada, and Chimichanga?
I can see how this can be confusing because they are all tortillas stuffed with deliciousness but they are some important differences to distinguish them from each other.
Burrito – typically a flour tortilla wrapped around a filling
Enchilada – typically a corn tortilla wrapped around a filling and then covered in sauce and baked
Chimichanga – a burrito that has been deep fried so the outside is crispy
Another thing they all have in common is that they are all delicious and welcome in my belly anytime!

How to Reheat a Burrito
I prefer to reheat these ground beef burritos in the oven. If you throw them in the oven on 350 for about 15-20 minutes, they should be perfect!

2.5 Pounds Ground Beef2 Packets Taco Seasoning1 1/2 teaspoons Better than Beef Bouillon1 Bottle Dr Pepper 12 oz1 Cup Water3 Tablespoons Butter2 Tablespoons Flour1 1/2 Cups Beef Stock1 Can Red Enchilada Sauce 19 oz1 Cube Beef Bouillon1 teaspoon Chili Powder4 Tortillas large burrito size4 Cups Mexican Cheese BlendUS Customary – Metric
Preheat the oven to 350 degrees.Heat a large skillet to medium heat and then add the ground beef and brown. Drain fat.Stir the taco seasoning (*see note) into the meat, along with the better than bouillon.Pour in the Dr Pepper and water, stir to combine. Bring to a simmer and cook until the liquid is almost incorporated.Meanwhile, in a small saucepan, melt the butter over medium heat. Slowly whisk in the stock, then the enchilada sauce (**see note) and chili powder. Simmer until thickened.Spoon 1/4 of the beef into the center of a tortilla and add a small sprinkle of cheese (the rest is used on top).Wrap the burrito up and place on an oven-safe plate. Pour sauce over the top and top with 3/4 cup shredded cheese.Bake in preheated oven for 10-12 minutes. Top with your favorite toppings (see note). Serve immediately.
Suggested serving accompaniments: lettuce, beans, sour cream, salsa, guacamole
One taco seasoning packet contains about 2 Tablespoons of seasoning so if you make your own or use our homemade recipe, you’ll want about 4 Tablespoon for this recipe
If you make homemade red enchilada sauce, you’ll want to use about 2 and 1/2 cups of enchilada sauce
